Popcorn is a variety of corn kernel which expands and puffs up when heated. A popcorn kernel's strong hull contains the seed's hard, starchy shell endosperm with 14–20% moisture, which turns to steam as the kernel is heated.

Air-popped popcorn is naturally high in dietary fibre and antioxidants, low in calories and fat, and free of sugar and sodium. This can make it an attractive snack to people with dietary restrictions on the intake of calories, fat or sodium.

INGREDIENTS

  • 1 tsp rapeseed oil
  • 15g popcorn kernels
  • 50g raisins
  • 45g whole almonds (ideally skins on)
  • 25g puffed wheat

METHOD

  • Heat the oil in a small pan, add the corn, cover and cook for 2-3 mins or until all the kernels pop.
  • Tip into a bowl, leave to cool, then stir in the raisins, almonds and puffed wheat.
  • Store in an airtight container.
